Demo: Zucchini Primavera

Zucchini Primavera Recipe

fresh crowder peas
fresh lady peas
fresh corn
zucchini cut julienne
heirloom cherry tomatoes
dry white wine
olive oil

Cut the zucchini using a mandolin slicer with a julienne attachment. If you do not have a mandolin slicer, you can use  peeler and knife. Heat a saute pan and add enough olive oil to coat the pan. Add both types of raw peas and let them soften. Add fresh corn and stir. Add shallots and garlic and make sure not to burn them. Add some white wine and let the mixture reduce. Add the zucchini and let the vegetable adsorb the liquid. Add more wine if the liquid is totally adsorbed by the zucchini and then let the liquid reduce again. Add tomatoes and mix thoroughly and let the mixture marry.
